Photographer and art director for ARSO, chef Tommaso Tonioni’s contemporary rural kitchen, born in 2019 from the meeting of photography and gastronomy. ARSO started as a pop-up restaurant at the Pulicaro farm in the Tuscia area near Viterbo, grew into a travelling restaurant, and opened its permanent home in June 2025 in Piazza del Duomo, Orvieto — named Newcomer of the Year by Gambero Rosso’s 2026 Guida Ristoranti d’Italia.
The project joins live-fire cooking, a direct farming supply chain and visual research: Tonioni selects the animals himself from the farmers, butchers and cooks without intermediaries, and the photographic documentation — shot entirely by Stefano Delìa — follows the full cycle from land to plate, becoming part of the project’s identity and a tool for talking about the value of food.
ARSO’s path has run through residencies at Agriturismo Pulicaro, collaborations with chefs including Nino Rossi (Qafiz, Michelin star), pop-ups across Italy, and steady coverage in the national trade press — Gambero Rosso, Fine Dining Lovers, Reporter Gourmet, Identità Golose. Tonioni is an Italian finalist for the S.Pellegrino Young Chef Academy and winner of the Acqua Panna Award for Connection in Gastronomy.
